Castel de Paolis

Castel de Paolis was founded in 1985 thanks the collaboration of Prof. Attilio Scienza and Santarelli Family. The first 2ha acres of the current 15ha of the wine estate were acquired in 1974 by Giulio Santarelli, just to follow his passion for the countryside and grape growing. Until 1985 the grapes of Castel de Paolis were sold to the local cooperative wineries in order to produce the typical local wines like the Frascati Superiore DOC. Between 1985 and 1993 all the 15ha were planted to produce Frascati and other wines from international variety, like Campovecchio Rosso from Syraz grapes. In 1993 the vinery started its production. In the cellar, stainless steel tanks and french barriques are used to vinification the wine.
