Owner and winemaker Fabio Cenni has dedicated the last 40 years of his life to one single grape: Sangiovese, which he interprets in an uncompromisingly classic way. Starting in the late 1980s from a small vineyard inherited from his father, and planted with 4 pre-phylloxera clones of Sangiovese, in 1992 Fabio increased his vineyards holdings to 6 Hectares, bringing the total selection of Sangiovese clones to 28. In his drive to study and understand this quintessentially Tuscan variety, Fabio has selected the best clones for each of parcel, matching with incredible precision each clone to the particular soil found in his vineyards. This diverse palette of clones allows Fabio to craft Sangiovese wines of delicious complexity, while his commitment to long bottle aging provide for ethereal complexity and finesse. Fabio’s signature winemaking style consists in respecting Sangiovese’s varietal nature, allowing the fermentations to develop spontaneously and extracting the colors and tannins with long macerations. To achieve elegance and finesse he ages his Sangiovese for over 5-7 years before release. Colle Santa Mustiola’s Sangiovese are among the finest and most elegant expressions of this classic Italian variety. Located in the town of Chiusi, in south-eastern Tuscany bordering Lazio and Umbria, Colle Santa Mustiola’s underground cellar is a former Etruscan tomb, a testimony and an homage to the wine that was produced in this area already more than 2000 years ago. The pliocene origin of the local soils, rich in alluvial pebbles, combined with the cold winters and cooler summers provide the ideal environment for Sangiovese.
